roast lamb loin fillets with zhoggiu
A MINI ROAST – using lamb loin fillets – just for two and with a Sicilian sauce. Be careful not to overcook the meat. Sautéed potatoes are perfect on the side.
SERVES 2
For the sauce
25g (scant 1oz) blanched almonds, toasted
pinch of sea salt flakes and pepper
1 garlic clove, roughly chopped
10g (¼oz) flat leaf parsley leaves
10g (¼oz) mint leaves
1 tbsp white balsamic vinegar
2½ tbsp extra virgin olive oil
squeeze of lemon juice
For the lamb
2 lamb loin fillets, trimmed
1 tbsp olive oil
